The honey process — where a layer of sticky mucilage is left on the bean during drying — enhances body and complexity, adding depth to the bright acidity Rwanda is known for.

 

In the cup, expect crisp green apple acidity up front, followed by juicy bursts of raspberry sweetness. There’s a nostalgic hint of cola bottles running through the mid-palate, finishing with a smooth layer of cacao that grounds the cup with gentle richness.
